SOUP MADE WITH TARHANA

INGREDIENTS
  • 3/4 cup sweet frumenty zest of 1 lime or half of a lemon
  • 40 g grated bottarga
  • ½ teaspoon of freshly ground pepper

INSTRUCTIONS
  1. Boil 1 liter of water.
  2. Add the frumenty and the zest
  3. Cook until the soup thickens.
  4. Grate 40 g bottarga.
  5. Add the grated bottarga and the pepper to the soup, stir, remove from heat and serve immediately.
