SOUP MADE WITH TARHANA
- 3/4 cup sweet frumenty zest of 1 lime or half of a lemon
- 40 g grated bottarga
- ½ teaspoon of freshly ground pepper
- Boil 1 liter of water.
- Add the frumenty and the zest
- Cook until the soup thickens.
- Grate 40 g bottarga.
- Add the grated bottarga and the pepper to the soup, stir, remove from heat and serve immediately.
